Adventures in Cookery #10 : Slow Cooker Irish Beef Stew. There are hundreds of recipes for it all over the Internet. I chose a combination of two that would have given me the least amount of trouble with exotic ingredients I happen to not have in my kitchen. I seared the meat and precooked the onions and garlic before tossing them into the slow cooker. I also used alcohol-free beer, which I quickly diluted with more stock, as the initial taste test found it a little, er, wanting. I was also a little annoyed that the vegetables appeared a little under cooked after sitting in the cooker for 12 hours. Husband loved it, though, and happily took seconds.
